A point to note here is that not every villager in your world will have a job. Just like it is with our everyday world, there will be some villagers who are nitwit or unemployed. There is no point in spending time and try to assign a profession to a nitwit. These villagers won’t do anything.
However, all the other employed villagers will pick up any profession that you provide for them. If you are confused about what is the profession of a particular villager, then you can observe their clothes, and you will get an idea. A more clear idea about a villager’s profession is evident by the job site block they are interacting with while working around. Each employed villager will have a particular job site block assigned to them.

How to change jobs?
Changing the jobs of villagers in Minecraft is not complicated at all. Whenever you spot an employed villager working on something, you will see a job site block that they are currently using. Go up to the villager whose profession you want to change and destroy the block of that villager. For instance, if you’re going to change the profession of a weaponsmith, first you will have to destroy the grindstone block that he is using.
As soon as you do that, the villager will lose his cool for losing his job and will be angry with you. So place a job block for the profession you want to assign to that angry villager in a 48-block vicinity. The villager will automatically look for a new job, and as soon as he finds the new job block, he will automatically switch his job over. For instance, if you have destroyed the grindstone block of a weaponsmith, assign him the job of a librarian, then place a Lectern block nearby, and the weaponsmith will switch over to a librarian.
As mentioned above, there are also unemployed and nitwit villagers in Minecraft. There is no point in wasting efforts with a nitwit, and they will never work. However, unemployed villagers are people who are willing to work. Just place a job block in a 48-block vicinity of the unemployed villager, and he will pick up the job. Rather than changing the profession of an employed villager, you should first assign professions to the unemployed ones.
